
Tis the season to be craving all the sweets! I had never been a fan of gingerbread cookies, they were always hard and dry, but then last year my cousin sent a homemade batch of the most delicious gingerbread cookies and this year I am craving them. She lives in Boston so I can't exactly just drive to her house and I don't need a whole batch of cookies just laying around the house anyways.
Also, every year my mom, my sister and I make a ton of Christmas cookies to give away to family and friends so that is coming up and I always over indulge during that. So, I decided to make a healthier alternative to curb my gingerbread cookie craving by making a banana gingerbread.

I always have bananas in the freezer I need to use up and I am trying to clean out my freezer so this was the perfect timing. This bread is sweetened with bananas and a 1/4 cup of honey and molasses and that's it! It is so good and gives you a good kick of that gingerbread spice, it was exactly what I have been wanting. Plus if you are use to those dried out gingerbread cookies like I use to be, this bread gives you the flavors, but not that dry hard cookie feeling in your mouth.
