
Chia seeds are a great substitute for oatmeal and can be prepared just like over night oats so all you have to do in the morning is stir it up, add some toppings and dig in. Chia seeds are a good source of antioxidants, omega-3’s, fiber and protein. They also are full of calcium, vitamin c, iron and potassium. Along with chia seeds I also add in ground flax seed which is another great antioxidant to be consuming. Ground flax seed includes almost all of the same benefits as chia seeds. Both of these combined make the chia pudding a nice thick consistency and that is why it can be a substitute for oatmeal.
This can also be a great thing to make the night before and take to work with you as a snack. It is good cold or warmed up.
Ingredients
2 tablespoons of chia seeds
1 tablespoon of ground flax seed
6-8 ounces of your choice of milk (I use unsweetened vanilla almond milk)
*The less liquid the thicker it will be
1 tablespoon of nut butter
Splash of vanilla extract
Ground cinnamon (as much as you like)
Healthy sweetener of your choice (I use ½ teaspoon of stevia, honey is also a good choice)
Toppings: Fruit, nuts, 60% or higher dark chocolate chunks
Directions
In a tupperware or jar with a lid combine the first 7 ingredients. Shake all together and then set in the fridge overnight. The next morning stir it up and you can eat it cold with your choice of toppings, or before topping the chia pudding you can warm it up then add your toppings. That’s it, enjoy!
